Ingredients (12–15 pieces)

1 cup cooked potatoes or mixed vegetables, mashed or finely chopped

½ cup cooked chickpeas, lightly mashed

1 garlic clove, crushed

1 tbsp Mediterranean spice blend (or cumin, paprika, oregano)

1–2 tbsp fresh cilantro or parsley, chopped

Salt + pepper to taste

Dipping sauce of choice (tomato-based, herb dip, or chili sauce)
Instructions

Prepare the filling:
In a pan, sauté onion and garlic until soft. Add mashed potatoes or vegetables, chickpeas, spices, herbs, salt, and pepper. Cook for a few minutes until everything blends into a fragrant mixture. Let it cool slightly. -
Fill the pastries:
Place a small spoonful of filling on each pastry square. Fold into triangles or rolls, sealing the edges with a bit of water. -
Fry until golden:
Heat oil in a pan over medium heat. Fry the pastries in small batches until crispy and deeply golden on all sides. Drain on paper towels. -
