1–2 red chili peppers, sliced (plus extra for garnish)

1 medium zucchini or similar vegetable, chopped

1 medium carrot, sliced

1 can coconut milk (or 1½ cups creamy broth alternative)

1 cup vegetable broth

Juice of ½ lime + extra wedges for serving

Handful of fresh cilantro

Salt + pepper to taste

Optional: turmeric or curry powder for golden color
Instructions

Sauté the aromatics:
Heat oil in a pot. Add onion, garlic, and ginger. Cook until soft and fragrant. -
Add vegetables:
Stir in carrots, zucchini, and sliced chili. Cook for a few minutes to soften. -
Pour in liquids:
Add coconut milk (or chosen creamy base) and vegetable broth.
Bring to a gentle simmer. -
Season:
Add salt, pepper, and a pinch of turmeric or curry if you want a deeper color. -
Finish:
Turn off the heat. Stir in lime juice and fresh cilantro. -
Serve:
Ladle into bowls and top with extra chili slices, cilantro, and lime wedges.
